A house variant on the traditional Dark & Stormy, this intense little delicacy was developed during the testing sessions of Pirates of Penryn. Beware, even in its short form it goes down rather too smoothly and your head may not thank you in the morning. The name comes from Penryn town's traditional association with the Saracen's Head.

  • Yields: 1 Serving

Ingredients

1 oz. Dark Rum

1 oz. Ginger Wine

1 tsp Treacle (mixed with a little water) to taste

Directions

1Add dark rum, ginger wine, and treacle to lowball glass. Garnish with a fresh slice of ginger. If you prefer a tall drink, add same ingredients to a high ball glass and finish with ginger beer.
